PARIS.- From October 2026, Artcurial will present The Cellar of Les Climats restaurant, Paris, through a series of dedicated auctions. Assembled with passion between 2013 and 2023 by Carole Colin and Denis Jamet, this outstanding cellar is renowned for the richness and quality of its Burgundy wines, offering a remarkable overview of the regions celebrated climats.
From regional appellations to Grand Crus, the auctions will feature more than 17,000 bottles across over 3,000 lots.
A Cellar Reflecting the Burgundy Climats
The name of Les Climats (2013-2023) refers to Burgundys famous climats: precisely defined vineyard plots that shape the very identity of the regions wine region and have been listed as a UNESCO World Heritage List since 2015.
Reflecting this remarkable mosaic of terroirs, Les Climats wine cellar brings together all the regions major appellations. The auctions will feature both highly sought-after estates and more confidential domaines, offering an exceptionally comprehensive overview of the richness and diversity of the Burgundy vineyard. Around 60% of the wines offered are red and 40% white, with a strong representation of vintages from 2015 to 2023.
A Cellar Built on a Shared Passion
Patiently assembled by Carole Colin and Denis Jamet, the cellar of Les Climats restaurant is the result of more than a decade of meetings, tastings and close exchanges with Burgundys winemakers.
Trained alongside some of Paris leading chefs, Carole Colin joined forces with Denis Jamet, an entrepreneur with a passion for wine and gastronomy, to build this remarkable collection. During their regular visits to Burgundy, they travelled from domaine to domaine, walked the vineyards, met producers and selected their wines directly at the source. This patient and long-term approach gradually filled their precious tasting notebooks, known as the carnets rouges.
Built on personal relationships, trust and discovery, this hand-on approach shaped Les Climats cellar. Every bottle reflects a rigorous selection process, true to the vision shared by its two founders and guided by deep respect for both nature and the people behind each wine.
Les Climats Cellar, an international reference
From its opening in Paris 7th arrondissement, Les Climats restaurant set out to showcase the full richness and diversity of Burgundy wines. The restaurant quickly established itself as a must-visit destination for wine lovers from around the world. Less than two years after opening, it was awarded its first Michelin star in 2015. In 2017, its wine list received the prestigious Grand Award from the American magazine Wine Spectator the highest distinction bestowed on a wine list placing Les Climats amongst a very select group of restaurants worldwide to receive this prize. Renewed over several consecutive years, this recognition honoured the meticulous selection process carried out directly with Burgundys domaines and winemakers. It is accompanied by the publication of a reference work, a wine guidebook dedicated to Burgundy wines.
This cellar also stands out for the exceptional conditions in which the wines have been preserved. The entire collection has benefited from professional storage in a naturally cool and humid environment, providing ideal conditions for ageing.
