How Do You Design a Brewery CIP System?



Design a brewery clean-in-place system from the vessels, piping, soil type, cleaning chemistry, required flow, pressure, temperature, contact time, recovery strategy, and verification method. CIP is not only a cart or chemical tank. It is the complete process that delivers cleaning solution to every product-contact surface and returns it safely.

Map each cleaning circuit before selecting tanks and pumps. Identify the longest pipe run, largest vessel, spray device demand, heating requirement, drainage path, and simultaneous operations. Use written procedures and confirm results rather than relying only on visual appearance.

What Equipment Is Included in a CIP System?

A CIP system may include chemical tanks, rinse-water tank, recovery tank, heater or heat exchanger, supply pump, return pump, filters, valves, hoses, instruments, conductivity measurement, temperature control, and an operating panel.

Small breweries may use a mobile cart, while larger breweries use multi-tank skids and automated valve routing. Select complexity according to circuit count, cleaning frequency, labor, chemical recovery, and production risk. Every system needs safe chemical handling, drainage, ventilation, and maintenance access.

How Many CIP Tanks Are Needed?

A single-tank cart can prepare and circulate one solution at a time. Two- or three-tank systems can separate caustic, acid or sanitizer where applicable, rinse water, and recovered solutions, reducing changeover time and allowing reuse under controlled conditions.

More tanks increase cost, floor space, piping, controls, and chemical-management responsibility. Calculate daily cleaning demand and solution volume. Do not store or reuse chemicals beyond documented procedures. Confirm material compatibility and never mix chemicals that can react dangerously.

How Is CIP Pump Size Determined?

The pump must provide the flow and pressure required by the spray device and piping circuit after accounting for elevation, friction, valves, hoses, and return conditions. Vessel diameter and spray-device type affect required flow.

An oversized pump can create damaging pressure, foam, or poor control. An undersized pump may leave surfaces unwetted. Ask for a pump curve and calculate the operating point. Confirm whether the same pump can serve the largest tank and the most restrictive line without operating outside a stable range.

What Makes a Spray Device Effective?

A spray device must wet and mechanically clean the intended vessel surfaces at the available flow and pressure. Fixed spray balls, rotary spray balls, and rotary jet heads have different demands and cleaning action.

Confirm coverage around coils, agitators, shadow areas, manways, ports, and vessel heads. Install the device at the correct position and keep openings free from blockage. Cleaning performance depends on solution chemistry, temperature, time, and mechanical action together; a large spray pattern alone does not prove cleaning.

How Much CIP Solution Is Required?

Solution volume must fill supply and return lines, maintain pump suction, operate the spray device, and leave enough reserve for losses and foam. The full vessel does not need to be filled during spray cleaning.

Calculate circuit hold-up and minimum tank operating level. Include hoses, filters, heat exchangers, and return piping. When comparing CIP systems, confirm usable tank volume rather than total shell volume. Too little solution can expose the pump to air and interrupt coverage.

What Cleaning Variables Must Be Controlled?

Control chemical concentration, temperature, circulation time, flow or mechanical action, and soil load. Weakness in one variable cannot always be corrected by increasing another. Excess chemical or heat can damage seals, surfaces, and equipment.

Use approved chemical instructions and brewery procedures. Measure concentration with a suitable method, monitor return temperature, and time the effective circulation period after conditions are reached. Record results for each circuit. Do not estimate concentration only by how slippery or strong the solution feels.

Should CIP Solution Be Recovered and Reused?

Recovery can reduce water, chemical, energy, and wastewater use when concentration and contamination are monitored. It requires suitable tanks, filtration, identification, testing, and rules for disposal or replacement.

Do not return heavily contaminated solution to a clean tank without an approved process. Separate incompatible chemicals and verify concentration before reuse. The economic benefit depends on cleaning frequency, solution volume, heating cost, wastewater charges, and the labor needed to manage recovery safely.

How Should CIP Piping Be Designed?

Use sanitary piping with appropriate slope, drainage, valve placement, and minimal dead legs. Circuits should allow cleaning solution to reach every product-contact path and return without trapped air or uncontrolled mixing.

Avoid low points that hold liquid and high points that trap air. Provide safe sample, drain, and connection locations. Confirm flow direction through heat exchangers, fillers, transfer lines, and valves. Label routes clearly so operators do not send chemical into product, floor areas, or equipment not designed for the solution.

Can One CIP System Clean the Entire Brewery?

One system can serve multiple areas when flow, temperature, chemical, distance, and scheduling are compatible. Long circuits and simultaneous cleaning may exceed pump or heater capacity. Packaging equipment may require different procedures from tanks and brewhouse vessels.

Divide the brewery into circuits and calculate the worst case. A mobile cart may suit a small cellar but become labor-intensive as tanks are added. Fixed supply and return headers can improve speed, but they require careful valve control and installation.

How Is CIP Performance Verified?

Verify that the correct chemical concentration, return temperature, circulation time, and flow were achieved. Inspect accessible surfaces, gaskets, valves, sample ports, and spray devices. Use the brewery's approved hygiene checks and product-quality monitoring.

Trend recurring failures, off-flavors, contamination, excessive chemical use, and cleaning time. A clean-looking tank can still contain soil in hidden areas. Validate new circuits and recheck after changes to pumps, spray devices, chemistry, procedures, vessel fittings, or piping.

What Information Should Be Given to the CIP Supplier?

Provide vessel drawings, diameters, heights, spray devices, circuit lengths, pipe sizes, elevation, soil types, cleaning frequency, chemical program, target temperatures, available steam or electricity, floor plan, drainage, and expansion plan.

Ask the brewery supplier for flow calculations, pump curves, heat-load assumptions, tank working volumes, piping diagrams, material compatibility, controls, safety provisions, and commissioning tests. Approve cleaning procedures with the brewery's chemical and quality specialists before production.
